Ingredients: 2 Servings
10 ozs Chicken Breast
1/4 cup Plain Greek Yogurt
1/2 Lime (medium, juiced)
Sea Salt & Black Pepper (to taste)
1/3 cup Dried Unsweetened Cranberries
1/4 cup Pecans (chopped)
1/2 Cucumber (large, chopped)
Recipe:
Bring a pot of water to a boil and reduce to a gentle simmer. Add the chicken and cover. Let simmer until the chicken is cooked, about 15 to 20 minutes. Remove the chicken and transfer it to a bowl. Shred it into pieces using two forks and set it aside to cool.
In a bowl, whisk together the yogurt, lime juice, salt, and pepper.
Add the remaining ingredients and toss to combine.
Taste and adjust the seasoning to your taste. Divide evenly between plates and enjoy!

Leftovers: Refrigerate in an airtight container for up to three days.
Serving Size: One serving is approximately one heaping cup.
